I love snacks. However, it is hard for me to find prepared snacks that have not been manufactured in a peanut and tree nut free facility. I enjoy making large batches of my own snacks that I can either freeze or store in the fridge for later. Yesterday, I was in the mood for cookies, so I decided to mix a few of my favorite things together.
Sunflower Oat Cookies
(makes 9-10 cookies)
1 cup of gluten-free oats
2 small bananas or 1 large banana
1/2 cup sunflower butter
Add ins: 1/4 cup raisins or 1/4 cup of dairy-free chocolate chips
Directions: Mash banana in a bowl and set aside. Mix the oats and the sunflower butter together. Mix the mashed banana into the oat/sunflower butter mixture. Add in desired raisins or chocolate chips. Form small balls (about 2 tbsp each) on a baking sheet. Bake at 350 for 15-20 minutes.
